I was recently invited to a Canadian Club whisky portfolio tasting and dinner at Wildebeest. I was already quite familiar with the Canadian Club brand, as their popular flagship 1858 Premium Rye was one of the first whiskies I had ever tried, and was also one of my regular go-to’s well into my mid-tween years (it was the affordable choice!). However, I had never really explored the rest of their portfolio until now. With a long history of making smooth premium whisky for over 150 years, they are famously known for being Al Capone’s whisky of choice, as the iconic mobster smuggled in thousands of cases of Canadian Club from Windsor to Detroit during the years of Prohibition.
Located in Gastown, Wildebeest is a meat-centric, whole-animal cookery that combines classic butchery traditions with simple, contemporary techniques. Having never been to Wildebeest, I was quite excited to attend this whisky tasting dinner to celebrate and try Canadian Club’s newest addition to their lineup of whiskies, Canadian Club Chairman’s Select 100 Percent Rye. Crafted completely from single grain rye, it is aged using only rye grain in quality bourbon barrels. With its robust spiciness and creamy caramel and oak notes, it work really well in cocktails, and its aroma is balanced with toasted grains and a hint of sweet vanilla. Here are some of the highlights from the 3-course dinner.
Entrée: Grilled Angus ribeye, herb potatoes, smoked salt, Canadian Club Chairman’s Select 100% Rye jus
For you casual mixologists, we also learned to make couple of really easy-to-make cocktails. Here are some for you to try at home:
1.5 oz Canadian Club® Chairman’s Select™ 100% Rye
0.5 oz Dolin Dry Vermouth
0.3 oz Cynar
0.3 oz Maraschino
Stir/strain into a chilled champagne saucer. Garnish with a boozy cherry and lemon oil
1oz Canadian Club® Chairman’s Select™ 100% Rye
1oz Fresh Lemon Juice
1 oz Maple Simple Syrup
0.5 oz Egg White
Serve in champagne saucer
